The Eezee Spinach Omelette

Breakfast of Champions

Try this iron-packed Eezee breakfast!

Serves 2.

What You Need:

  • 1 Packet Eezee Noodles (spice pack not required)
  • 2 eggs, beaten
  • ½ cup spinach
  • 1 tablespoon olive oil (or any oil you use)
  • 2 tablespoons onion, finely chopped
  • 2 cloves garlic, minced
  • Salt & pepper to taste
  • Sriracha to top

What To Do:

Cook Eezee Noodles according to directions on package. Rinse, drain, season with salt & pepper to taste and set aside.

Heat olive oil in a medium non-stick pan over medium-high heat. Add onions & garlic & cook, stirring occasionally, for one to two minutes or until soft & fragrant. Toss in spinach & cook for one minute, or until wilted.

Add noodles to pan & mix well with other ingredients. Cook until heated through, about another two minutes.

Spread noodle mixture evenly over the pan. Slowly pour beaten eggs over noodles, evenly covering the whole mixture.

Lower heat to medium-low & cook for four minutes. Flip the omelette with a flat spatula & cook for another three to four minutes.

Divide omelette between two plates, season with salt & pepper, & top with a drizzle of Sriracha.
